The following ingredients are needed for the chicken:

1 farmer chicken of 2.5 to 3 kg 1 bunch of flat-leaf parsley
1 bulb of garlic 3 fully ripe tomatoes or (if prepared in winter) 8 – 10 pieces of dried tomatoes
6 medium sized firm potatoes 3 red onions
2 – 3 carrots 1 celery bulb
400 ml chicken stock 4 tablespoons olive oil
salt 2 bay leaves
200 ml dry white wine black pepper from the mill

Preparation: How to prepare the crispy roast chicken in the oven

Be sure to take the chicken out of the refrigerator one or two hours before preparation and let it warm up at room temperature. This reduces the cooking time. Then rinse the rooster in cold water, pat dry and stuff with the entire bunch of parsley. Save only a few leaves for later decoration. Peel and coarsely chop the celery root, wash the carrot and cut it into small pieces, quarter the peeled onion. For example, with larger grills, you can add a rotating spit, or you can use a grilled chicken holder, which is filled with water in the middle for preparation. As with the roast chicken recipe in the oven, with a roaster or in a romaine pot, take the rooster out of the refrigerator two hours before preparing it, wash it in cold water and pat it dry. The difference between this and the other methods of preparation is that the chicken is only attached to a skewer or a holder and therefore does not come into contact with the vegetables. Either you have yourself your own spice mix of sea salt, black pepper, onion, garlic, paprika, lemon zest, celery, bay leaves and nutmeg or you can use ready-made spice mixtures, ideally without added flavor enhancers, aromas or preservatives. If you have neither, plenty of paprika powder and some smoked salt, salt and pepper will also do. After you’ve sufficiently seasoned the roast chicken, stick the rooster on your grill and follow each manufacturer’s recommendation. Generally, preheat the grill to a temperature of 200 degrees indirect heat and grill for 50 to about 1 hour. Just before your desired browning, coat the seared rooster with your spice mixture again.
